Can you eat the organs from a deer?
Yes — heart, liver, and kidneys are all edible and historically prized. However, in CWD zones, avoid consuming organs because lymph nodes and nervous tissue can carry prions. Outside CWD zones, organs from a healthy deer are safe to eat with normal cooking practices.
Heart is mild and steak-like, traditionally trimmed and pan-seared or grilled. Liver is best within 24 hours of harvest, soaked in milk to mellow flavor. Kidneys are strong-flavored and benefit from long marinating.
