What is the best way to freeze venison?

Vacuum-seal portions or wrap tightly in butcher paper and freezer paper for best long-term storage. Vacuum-sealed venison keeps quality for 12-18 months at 0°F. Air exposure causes freezer burn and flavor degradation, which is why double-wrapping or vacuum sealing matters more than the freezing temperature itself.

Portion ahead of freezing — once frozen, smaller packages thaw faster and there's no need to refreeze. Label every package with cut name and harvest date. Keep freezer temperature at 0°F or lower.

Ground venison freezes well but quality declines faster than whole muscle cuts — use ground within 6-9 months for best taste.
